WHAT CAN I USE IF I DON’T HAVE BUTTERMILK?
There are a few popular methods for substituting buttermilk. Pick which one is best for you, based on what you have on hand:
Cooking Instructions

1 cup buttermilk = 1 Tablespoon white vinegar + enough milk to measure 1 cup
1 cup buttermilk = 1 Tablespoon lemon juice + enough milk to measure 1 cup
1 cup buttermilk = 1 cup plain yogurt
1 cup buttermilk = 1 and 3/4 teaspoon cream of tarter + 1 cup of milk
HOW TO SUBSTITUTE BUTTERMILK
The simplest way to substitute buttermilk is to pour 1 Tbs. of vinegar into a 1 cup measurer and then fill the rest of the measuring cup with milk. Then gently stir the mixture and let it sit for about 5 minute - 2

I made this chilled pasta because I had an extra avocado on hand. I used Cappellini, which cooks quickly. The sauce does not have the distinct smell of soy milk, so it should be fine for those who dislike soy milk.Adjust the flavor with salt if needed. The wasabi adds an accent to the dish, but it's fine to omit it. Recipe by Uiui

Buttermilk Biscuits
I've tried several biscuit recipes & this is my favorite! I tweaked the recipe a bit when I make it. I always use 1 cup of buttermilk. When I tried 3/4 cup the dough was always too dry & didn't stay together. Also, I mix this in my kitchenaid stand mixer & it turns out fine so you don't have to mix by hand if you don't want to. I use a waffle iron that was my grandmother’s. I can guess what decade it’s from, but I’m not sure enough to say. All I know is that I have bought other waffle irons in my life and they do not compare to this one. If you have one, hang onto it as long as you can. If you see one at a garage sale, get it!

Our Family Recipe for Octopus Rice
It's a dish that I've been making for ages. It's best if you use bonito based dashi stock. Try our Homemade Ponzu Sauce for Hot Pot
I made this when I forgot to buy ponzu. There's really nothing to it!Of course, if you have yuzu or sudachi citrus on hand, those would make great (if not better) substitutions for the lemon. Depending on the brand or type of soy sauce, it could get a little to salty for your taste, so try adjusting the amount as you go.Recipe by Chiton.

1 2 3 Chicken Stew
This recipe has been one I run to when I need a good meal with little effort. Best is you can use what vegetables you have on hand. One pot to use and the flavor seems like it simmered all day. I do recommend the fresh herbs. There is a huge flavor difference cooking this with them. Get your meal started and put your feet up for 40 minutes. You got to love that!

Delicious Classic Buttermilk Pancakes
Since it's difficult to find buttermilk in Japan, I came up with an easy alternative way to make buttermilk with lemon juice and milk as advised from a friend. Then I recreated the famous and popular pancake using this buttermilk with easy to get hold of ingredients. From the second pancake, make sure you continue to follow the procedure of greasing the pan, removing the pan from the heat and let it cool down on a damp cloth, and heating it up again. This way, all the pancakes will turn out very fluffy. Recipe by sc0c0
