I know that squid is usually cooked with daikon radish or taro root, but for some reason I've had potatoes with my squid ever since I was small.

Ingredients

  1. 2Squid
  2. 2Potatoes
  3. 100 mlSake
  4. 100 mlDashi stock
  5. 2 tspSugar
  6. 1 tbspUsukuchi soy sauce

Cooking Instructions

    Remove the entrails from the squid, and cut into rings.

  2. 2

    Cut the potatoes into 1 cm half-moon shaped slices. Soak in water to wash off the surface starch.

  3. 3

    Simmer the dashi stock and sake in a pot. Add the squid and cook until it changes color. Remove from the pot.

  4. 4

    Add the potatoes into the same pot. When it boils, add the sugar and simmer for 10 minutes. Add the soy sauce, and continue to simmer.

    When the potatoes are almost done, put the squid back into the pot and continue to simmer some more.
