Chewy Steamed Bread with Pancake Mix & Bread Flour

I really wanted to eat some chewy steamed bread but when I tried to make it with shiratamako, it just wouldn't mix.
I should use it for dango instead, so I tried with bread flour and it went quite well.
・Pancake mix is a little sweet, whereas rice flour is not, so it needs a bit more sugar than the recipes that use 100% pancake mix.

Chewy Steamed Bread with Pancake Mix & Bread Flour

Cooking Instructions

Mix the egg, vegetable oil, milk, and sugar together well.

Add the pancake mix and bread flour to the mixture and fold in with a rubber spatula.

[When using a steamer] Prepare some paper cups (preferably lined with glassine paper) and pour the batter into the cups.

Place the cups into a steamer that is already steaming and steam for 15 - 20 minutes. (This takes longer than it would in a frying pan).

[When using a frying pan] Place the cups in a large frying pan.

Pour water into the frying pan until 1 cm in height, cover with a lid and steam for 12 - 14 minutes.

Once they become full and fluffy, they're done.

Try replacing the 200 g pancake mix in these recipes with 100 g pancake mix and 70 g rice flour.

When using bread flour, the bread flour may not rise as much so that's why it's better to use baking powder as well when possible. I use 2 g for the bread in the photos.
