Herring Salad with Beetroot

This is a Russian and Ukrainian speciality. When I stayed in Russia, I loved this salad and I often ate it. I happened to get beetroot, so I decided to have this for the first time in a while.

Cook the beetroot and potatoes whole. You can remove the skin easily after cooking. You can also use onions or carrots. Drain the pickled herrings well. Recipe by Nashi-

Ingredients

4 servings
  1. 1Beetroot
  2. 3Potatoes
  3. 3Eggs
  4. 3 filletsPickled herrings in vinegar
  5. 1Dill
  6. 3Pickled cucumbers
  7. 3 tbspMayonnaise
  8. 2 tbspSour cream
  9. 1 dashSalt and pepper

Cooking Instructions

    Cook the beetroot and potaotes without peeling until tender. Boil the eggs.

    Chop the cooked beetroot, potatoes, eggs, pickled cucumbers and pickled herrings separately.

  3. 3

    Mix the ingredients except the herrings with the mayonnaise and sour cream. Salt and pepper to your taste. Put the mixture and herrings into a small bowl.

    Cover the bowl with cling film and chill in the fridge for 2 to 3 hours. When the mixture is set, turn the bowl over onto a serving dish. Remove the bowl and garnish with dill.
