Indian Inspired Chili Oil (easy)

An aromatic and spicy Indian-inspired chili oil featuring a rich blend of flavors. This chili oil is crafted by infusing a base of onions, scallions, cilantro, crushed peanuts, cumin powder, coriander powder, and garam masala with a mixture of tempered ginger, garlic, and red chili powder in hot oil. A splash of lemon juice, salt, and sugar adds a touch of tangy sweetness. The resulting condiment is a harmony of savory, spicy, and zesty notes, perfect for adding depth and heat to a variety of dishes.

Cooking Instructions

Chop the onions.

Chop the scallions.

Chop the cilantro.

Crush the peanuts. I used a dry grinder, a mortar and pestle can also be used. Using the dry grinder, the peanuts got ground a bit finer than I wanted.

Slice the ginger and mince it.

Slice the garlic and mince.

In a wide bowl, first add the onions.

Add the scallions next.

Add the cilantro.

Next add the crushed peanuts.

Next add the cumin, coriander and garam masala, lemon juice, sugar and salt. Mix. Keep aside. ✅Note: add half the salt now and you can add as required later.

Heat the oil and add the ginger, garlic and the Kashmiri red chili powder. (If you don’t want too much heat, do not add the other red chili powder). Temper for 10 seconds. ✅Note: Kashmiri chili powder is known more for its pigment than for heat so it’s perfect for milder chili oil or milder Indian dishes.

Add the tempered hot oil to the bowl. And mix well.

Let the flavors blend for 30 minutes to an hour and enjoy.

Pair with rice and enjoy it like a curry, add to marinades, noodles, rice bowls, and more!
