Basic Baked Donuts & Cupcakes with Pancake Mix

This batter is simple and delicious.
I've adjusted this recipe to yield about 1 plateful of donuts. I'm really into using pancake mix in everything at the moment, so I've also uploaded some other recipes that use it.
Of course you can still make this by mixing everything together in a bowl instead.
I recommend using a freezer bag if you're just making enough batter for a 12 donut mold or small cupcakes though.
This recipe isn't so sweet so if you want to add more sugar, feel free. Recipe by tama-ma

Cooking Instructions
- 1
Preheat the oven to 170℃ for 20 minutes. Prepare a medium sized freezer bag.
- 2
Please add chocolate or whatever toppings you plan to use into the molds in advance.
- 3
When using butter - first add the butter to the bag and then melt it over a mug filled with hot water until fully melted.
- 4
Add all of the non-powder ingredients and mix well inside the bag.
- 5
Add the rest of the ingredients and when combined, close the seal on the freezer bag and squish the batter together with your hands. Rub together until you have worked out all of the inconsistencies, but be careful not to overwork it.
- 6
Squeeze all of the mixture down to the bottom of the bag with your hands.
- 7
Hold the bag with one hand and cut a triangle into one corner about 5mm in. The batter will come out quite quickly, so make sure you have the molds on hand when you cut.
- 8
Pour the batter into the molds as if you were drawing a circle. If there are any un-even parts, fill those in afterwards.
- 9
Tilt the mould from side to side to even out the batter and drop the mould from a short distance onto a work surface to eliminate any excess air bubbles.
- 10
Bake for approx. 15 minutes. Check whether they are done by inserting a wooden skewer into the center, if it comes out clean, then they're ready. Let them cool in the molds for a little while before removing them.

Old-Fashioned Donuts Made With Pancake Mix Old-Fashioned Donuts Made With Pancake Mix
If I made donuts following the instructions on a box of pancake mix, they turn into puffy donuts like Mister Donut's "home cut" ones, maybe because they contain milk. (Mister Donut is a donut franchise in Japan.) I prefer crispy and crumbly old-fashioned type donuts, so I wondered "What if I left out the milk, as if I were making cookies?" So I tried it out, plus I made sure not to over-mix the batter to achieve that crumbly-crispy texture. I was able to make the kind of donuts I wanted to. Try using brown sugar instead of the white sugar.I used the type of butter that comes in pat-sized packets, since they are easy to measure. They come in 8 g per piece cubes. I used bread flour for dusting, but I don't think that using cake flour instead should make a difference. The surface of the donuts will form cracks naturally. The dough is rolled out with your hands instead of a rolling pin, so the donuts will have natural bumps, and look very simple and homemade. But if you prefer, you can roll the dough out with a rolling pin instead. Make sure to use fresh frying oil, not one that's been pre-used. Recipe by Mihono kitchen cookpad.japan -

Baked Apple and Lemon Cupcake-Muffins Using Pancake Mix Baked Apple and Lemon Cupcake-Muffins Using Pancake Mix
I like apple pie but it's so sweet and has a lot of calories and sugar. I came up with a mildly sweet cake that has a refreshing sweet and sour taste from the juicy baked apples and the acidity of the lemon. It's so easy to make too. The apple and lemon are rich in vitamins besides. If using margarine, you can make these quickly and easily. Microwaving the apples makes it easier than making apple pie. Since these have less sugar than usual, they're lower in calories too. You only use about 3/4 of the apple, so just put the rest in your mouth.Kids love these little cakes. One child can eat several of them. The cakes are very popular snacks in our family. Recipe by cocorarara cookpad.japan
