  1. 1 largeBurdock root
  2. 30 gramsWalnuts
  3. 1Oil for deep frying
  4. Seasoning ingredients:
  5. 2 tbspKudzu powder
  6. 1 tbspWater
  7. 2 tbspMirin
  8. 1 tbspor more Soy sauce

Cooking Instructions

    Slice the burdock into long, fat shavings. They will burn easily if shaved too thin.

  2. 2

    Pan fry them in oil until crisp. The heat should be high at first, then reduced to low while slowly frying the burdock shavings.

  3. 3

    Increase to high heat to make it easier to drain the oil. Dry roast the walnuts. They burn easily, so be careful.

    At this stage, the burdock can be eaten as chips. They're delicious and addictive!

    Put the seasoning ingredients in a large sauce pan, stirring in the kudzu powder. Use a wooden spatula to make a paste. Mix until it becomes translucent and glossy.

    Add the burdock and walnuts and coat in the kudzu sauce.
