Cooking Instructions

Grate the lotus root and ginger and squeeze out the juice to make the tea.

In a small saucepan, add the juice from lotus root and ginger, add the water and a smidgen of salt (measured by scooping it with tips of two chopsticks), then bring to a boil.

Drink up while it's hot.

When you have a high fever (38℃ or more) and cough, it's best to drink fresh lotus root tea. For that, add 1 teaspoon of the juice from grated ginger and a tiny smidgen of salt (just a few grains scooped onto the tip of a chopstick.)

Use the grated ginger as filling for oyaki rice pancakes or hamburgers.

Secretly, I am proud of it.I recommend using earl grey tea which has a strong flavor.Simmering the hull of the vanilla beans will reduce the soy milk-like flavor. Do not omit this process.It is hard to tell when the jam is ready. If you can see the bottom of the pan for just one second when you scrape the bottom of the pan, it has the consistency of a condensed milk. If you can see the bottom of the pan for about 2 seconds, it has the right consistency for a jam. And I used "Macrobiotic Apple Muffins" as a base for the batter itself.I want the marron cream to be centered after the muffins are freshly baked, but it tends to sink to the bottom when baking. When you fill the batter, be sure to place the cream close to the top. Make sure to cut the chestnuts in half before adding them. They will be too heavy if you use a whole chestnut and will sink into the batter. Gently place the chestnuts on top without pressing them into the batter.
