This is our family's go-to bitter melon appetizer.

When you add the bitter melon into the frying pan, let it cook until it's nicely browned.
Even if the pieces stick together, they'll come apart when you flip them over.

Ingredients

  1. 1Bitter melon
  2. 1 tbspeach ★ Soy sauce, sake
  3. 10 grams★ Garlic and ginger
  4. 1 tbspplus Katakuriko
  5. 2 tbspOil

Cooking Instructions

    Halve the bitter melon. Remove its seeds and fiber, and cut into 5 mm slices. You don't need to remove any bitterness by soaking it in salt water.

    Put the bitter melon and the ★ ingredients into a plastic bag and let the flavors settle in.

  3. 3

    Transfer the bitter melon into a new plastic bag, and coat with katakuriko. Let some air into the bag and shake it around. The katakuriko will coat the melon nicely.

    Heat some oil in a frying pan and pan-fry the bitter melon. Flip them over once they're nicely browned. They're done when both sides become crisp.
