Ingredients

8-10 servings
  1. 1Beef Roast, cut into big chunks
  2. 1Yellow Onion, diced
  3. 3-4Lg. Russet Potatoes, peeled washed and cubed
  4. 1 BagFrozen Mixed Vegetables
  5. 1/2 BagFrozen Peas
  6. 2 CupsBeef Stock/Broth
  7. 1 Tbsp.Salt
  8. 1 Tbsp.Black Pepper
  9. 1 Tbsp.Onion Powder
  10. 1 Tbsp.Garlic Powder
  11. 1 Tbsp.Dried Parsley
  12. 1-2 PacketsBrown Gravy Mix

Cooking Instructions

8hrs
  1. 1

    In a large slow cooker add all ingredients. Give a quick stir to combine everything. Cover and let cook for 8 hours on high til meat and veggies are tender and sauce is thickened (if it's to thick add a little bit more beef stock/broth). Stir ever so often. Once done serve immediately. I love it over biscuits 😍

I really liked this. Made it last summer when the family left and it lasted me ten days. — What can I say, I like to cook things which make a lot. This took my Instant Pot SIXTEEN HOURS to slow cook though. I clearly did something wrong. Planning to make this again in a couple weeks though, and this time, I think I'll try dividing the whole thing in half and using the full power of the instant pot.
