Ingredients

  1. 3Scotch Bonnet peppers or a hot pepper of your choice
  2. 1 1/2 cupschopped red onions
  3. 1 poundtomatoes finely chopped
  4. Chill pepper
  5. 350 gabout ¾ pound fluted pumpkin leaves (ugwu), or spinach
  6. 1/2 cupvegetable oil
  7. Salt to taste
  8. 1seasoning/stock cube crushed
  9. 1 tbsplucus beans (optional)
  10. Marcel fish (smoke fish)

Cooking Instructions

    Chop the Scotch Bonnet pepper, onions, tomatoes, pumpkin leaves or spinach and set aside. Keep separate. 

    blend the peppers roughly Heat the vegetable oil over medium heat. When hot,. add the onions, lucus beans stir for some minutes then add pepper and stir-fry for 1 minute. Add the salt to taste, crushed seasoning, add fish. Stir to mix and let cook 3 minutes, stirring occasionally. Allow to cook for some minutes.

    Add the chopped pumpkin leaves or spinach and stir. Cook for another 3 minutes.your vegetable is ready. You can serve with yam,potatoes, boiled plantain.

    1 tuber of puna white Yam about 1.5kg
    Salt start with about about 2 tsp (optional)
    Water
    sugar to taste optional
    Instructions
    Cut yam tuber into 1-inch sizes round slices. Using a sharp knife, slice into one side of the yam one at a time about 3 cm deep and peel around the circumference
    Depending on the circumference of the yam, you may want to cut into halves for easier cooking. It fits better in the pan when done this way.

    Rinse yam clean thoroughly and place in a large saucepanAdd enough water to cover the yam and add salt and sugar if usinglace on medium heat and cook till yam is soft. Yam is cooked if a fork goes through it easily. Your yam is ready enjoy with vegetables
