Palm nut soup/ ofe akwu

I love food lol but my favorite soup of all, is this beautiful palm nut soup. The flavor of the palm nut is indescribable and delicious 😋! The palm tree is just amazing that you can get wine from it and it’s no low class wine either! Palm oil is a must for a lot of Igbo dishes and of course the palm nut soup 🍜 is time consuming but so worth it !

Cooking Instructions

Clean the nuts very well. After getting dirt and debris off cover with plenty of water and cook on high with lid on for about 45 mins. Keep adding water as needed.

Take the nuts out and place in your pounder (that’s what I call it) pound the nuts until the fibers are exposed but not breaking the seed inside. After pounding place back into a large pot and pour enough water that goes about an inch above all the fibrous nuts. Swoosh it around in the water and squeezing for just a minute or so. Then start squeezing all the liquid out of the fibers and place the fibers aside.

After all the fibers are squeezed out then pour the liquid through a strainer so no fibers remain. Take the onion, scotch bonnets,maggi and garlic with just a little bit of water and blend til smooth.

Take all the liquid and start to boil on high and covered for about 45 minutes (it will reduce about halfway) keep watchful eye over it and stirring regularly. Pour in the blended mixture. Add the rest of seasonings except scent leaves and crayfish. I like to add mine just before it’s finished. Adjust flavors to ur liking if needed. Eat with rice or yam

Blending your belly pepper,chilly pepper with the garlic,onions and cray fish gives the paste a nice aroma and also taste.Least I forget I used the processed okro because I couldn’t get the fresh okro here .You can cut spinach and add to your okro soup.Don’t forget to wash your hands before you start cooking and also wash all the veggies that needs to be washed.
