Chopped Sausage and Parmesan Toast

This was tonight's appetizer: When I opened the refrigerator, my eyes fell on the sausage So, I chopped it up and tried toasting it.
The amounts listed are aimed at covering a slice of bread. Please adjust to taste.
For herbs, I recommend basil, parsley, and coriander. You can forgo herbs if you like. Recipe by Snow*Love

Top the bread with the sausage mixture and toast in an oven until crispy. Enjoy!

I thought I'd never have ring liver sausage again. It had gone extinct around here for a while. Probably my favorite breakfast of all time. But, I found a decidedly good version in "Dietz & Watson's Liver Ring Sausage" at one of the last local small town grocery stores, the spice and everything is more pronounced than the old time stuff I used to get, but very good. Only difference is, they are selling it specialty, $8.95 for a ring, it used to be ubiquitous liver sausage for cheap. Last time I bought it years ago, it was less than $3.
