Ingredients

  1. 1 kgturai/ridge gourd/gilka(washed and chopped in medium pieces)
  2. 3 tbspnsplit yellow moong dal(washed and soaked)
  3. 1big size onion
  4. 1medium size tomato
  5. 1 sprigcurry leaves
  6. 3green chillies slitted
  7. 6-7garlic cloves
  8. 1 tspmustard seeds
  9. 1/4 tspturmeric powder
  10. 1 tspred chilli powder (optional)
  11. 1 tspcoriander powder
  12. 1/2 tspgaram masala powder
  13. 1/4 tspjaggery or sugar(optional)
  14. 2 tbspncooking oil
  15. Handfulcoriander leaves
  16. as per taste Salt

Cooking Instructions

    Soak d moong dal in warm water for at least 15-20mins.

    Wash d turai and peel d skin off., chop as per your desired wish.

    Heat a wok,add oil,add mustard seeds,let it splutter,add green chillies,curry leaves,add chopped garlic cloves,saute for some seconds,add, onions,saute till becomes translucent,add turmeric,red chilli, coriander powder,saute,add tomatoes,saute till it becomes soft,add in soaked and rinsed split yellow moong dal,stir well.

    Add chopped turai mix well and add salt and sugar,close with a lid. The turai will start releasing its water and it is sufficient for d dal to cook.
    (Do not add water)

    Let it cook on a sim flame.

    Stir in between,as the water reduces,c add garam masala and coriander leaves,check and off d flame.(keep d consistency as per your taste,bit watery or dry)
    Let it remain close with lid for 5-7mins.

    Turai-moong dal ki sabzi is ready to serve.
    Accompanied by roti,phulkas or steamed rice.

    Note:-here I have used yellow moong dal. it goes really well with ridge gourd. You can also use chana dal instead of moong dal.
