Inari Sushi with Nuts and Dried Fruits

I originally created this recipe as an entry for a recipe contest sponsored by the company that sells the nuts and dried fruits I used. However, the theme of the contest was rather extravagant and I didn't think this fit well, so I entered it in a healthy eating recipe contest sponsored by another company instead.
I made these inari sushi with the rice showing so they would be fun to look at.
I used the sweetness of the dried fruit only, and didn't add any sugar to the rice (as you usually would to sushi rice).
They are good when they're freshly made, but they are also delicious if made ahead of time for a party. I personally like them better after they have rested for a while. Recipe by Mizuki shan

Cooking Instructions
- 1
I used these pine nuts, apricots and cranberries. I like the packaging, which clearly lists the nutritional information of the contents.
- 2
Wash 1 rice cooker cup worth of rice, and add a bit less water than usual. Put in the dried fruit, sake, and dashi stock granules.
- 3
I used these store-bought inari sushi skins.
- 4
Add the pine nuts to the freshly cooked rice, squeeze in the juice of one sudachi, and mix. The apricots will melt a little and add a subtle color to the rice.
- 5
I wanted to use the sourness of the sudachi juice only, but I found that vinegar is needed after all. Add 1 tablespoon of vinegar and mix.
- 6
Chop up the daikon radish sprouts and mix them into the rice. Stuff the rice into the inari sushi skins, and they're done.
- 7
Bonus: I didn't have enough of the premade inari sushi skins, so I chopped up 2 of them and mixed them with the remaining rice for a chirashi sushi-style dish.

Inari Sushi with Burdock Root Inari Sushi with Burdock Root
Inari sushi is delicious, isn't it? You can make them just with regular sushi rice but I prefer the texture of the burdock roots so I add a lot of them in.I shaved the burdock roots when I made this for first time, but it was a bit difficult to fit them in the aburaage tofu skins, so I chopped them up this time. It takes more time to cook when it's chopped rather than shaved, so simmer it slowly. Recipe by Pukuttopukumaru cookpad.japan -

Inari Sushi Inari Sushi
I consulted a recipe from Kikuchi Katsuhide, the head chef of "Shinoda Sushi" in Nihonbashi, Tokyo. This doesn't use dashi, but rather water for seasoning. When you think you want to have inari sushi, prepare this the day before! If you make a lot, you can store them in the freezer. It's also delicious in kitsune udon. The size of the aburaage will vary depending on where you get it, so please adjust the amounts of the ingredients accordingly. This is just how to prepare the aburaage, so fill them as you like. As the aburaage is rather sweet, I suggest something acidic for a delicious inari sushi. Recipe by kuisinbou cookpad.japan -
Flavorful Inari Sushi Flavorful Inari Sushi
I made this for my son who loves inari sushi. After trying out many different combinations and measurements of condiments, I finally compiled this recipe. You can use leftover broth to simmer carrots or hijiki to mix in with the rice. Or, you can season the rice with yukari (dried red perilla leaves) powder or salmon flakes. You can season the rice with almost anything and it will still be tasty. This makes slightly sweet inari sushi, so reduce the amount of sugar to your liking. For 12. Recipe by Mizuharun cookpad.japan -
