Simmered Purple Runner Beans in a Pressure Cooker

The pressure cooker made it so easy that I wanted to put some effort into making this.
If you want to eat this right away, boil it down a bit over low heat after adding the beans to the syrup. Keep the beans in the syrup until you are ready to eat (the beans get wrinkly if exposed to the air). The syrup is mildly sweet. Recipe by Taunbi-

Rinse the runner beans lightly, and remove any damaged beans. Soak the beans overnight in 2-3 times their volume of water.

Put the beans into a pressure cooker with the soaking water. Heat over high heat. When the pressure cooker gauge indicates full pressure, reduce the heat to low and cook for 15 minutes. Let the pressure cooker cool down naturally.

Meanwhile, make the syrup. Add the ☆ ingredients to a pot and boil for 2 to 3 minutes.

After the pressure is released, discard the cooking liquid. Add only the boiled beans to the syrup from Step 3 and bring to a boil. Let sit overnight. If you have time, heat the beans once in a while and let them cool naturally, repeating several times. The extra effort will make it more delicious.
