I was chosen to be a tester for a brand of crab sticks, so I tried them in these summer rolls.

Rehydrate the spring roll wrappers just before you make the rolls. If you do it in advance they'll dry out.
The rehydrated wrappers stick to each other if you stack them, so dip them one at a time. Recipe by DUFFYchan

Ingredients

4 servings
  1. 8Imitation crab sticks
  2. 1/2Cucumber
  3. 2leaves Lettuce
  4. 20 gramsCellophane noodles
  5. 4Spring roll wrappers (rice paper wrappers)
  6. Dressing of your choice
  7. 1See Multi-Purpose! Chinese-style Dressing

Cooking Instructions

    Julienne the cucumber. Soak the harusame noodles in boiling water for 5 minutes, and drain well. Shred the lettuce leaves to the same length as the crabsticks.

    I bought the rice paper wrappers at the Chinese section of the supermarket.

    Put lukewarm water into a large bowl, and soak the wrappers.

  4. 4

    They become soft in 1-2 minutes.

    Put lettuce, cucumber, harusame noodles and 2 crabsticks on a wrapper.

  6. 6

    Fold the near end of the wrapper over the fillings.

  7. 7

    Fold in both sides of the wrapper.

  8. 8

    Roll up as shown.

    Cut each roll in half, and they're done!

  10. 10

    Serve with a dressing of your choice.

    You can also wrap shrimp, salmon, ham, steamed chicken, or whatever you like.
