Sometimes you just need a good biscuit to start the day. After watching Alton Brown, and rereading Sam Sifton, this is my current version. Hope you enjoy.

Ingredients

20 minutes
12 biscuits
  1. 1 1/2 cupsAP flour
  2. 1/2 cupcake flour
  3. 3/4 tspsalt
  4. 1/2 tspcane sugar
  5. 2 1/2 tbspchilled butter
  6. 2 1/2 tbsplard
  7. 1 cupbuttermilk
  8. fine sea salt, cane sugar, and cream to finish

    Preheat oven to 400º.

    Add the flours, salt, and sugar in a large mixing bowl. Whisk to combine.

  3. 3

    Add the butter cut into 8 pieces. Use a pastry cutter to chop into the flour. Don't overdo it, you want the pieces to be sand like.

    Add the lard cut into 8 pieces. Use your fingertips to combine into the flour mixture.

    Add the buttermilk. Use a soft bench scraper to fold the ingredients together. Empty onto a floured board.

    Very lightly press the ingredients together until they form a ball.

    Press the ball out into a 6"x6" square. Using a hard bench scraper, fold the dough over on itself 8 times to laminate.

    Move the dough to the side of the board. Remove any leftover dough, reflour the board.

    Place the dough in the middle of the board. Using a medium round, cut out biscuits, placing them on a half-sheet baking pan so they just touch each other. Roll the leftover dough together gently to eke out a few more biscuits.

    Brush cream on the top of the biscuits, then sprinkle lightly with fine sea salt and cane sugar.

    Bake for 20 minutes or so until golden brown, rotating halfway through.

    Consume.
