This is something I grew up on I love this dish I can eat this all day, everyday, a lot of work but it’s worth the money it’s worth the time a combination of ingredients for this delicious favorite pastry is very classical the great news is that it works brilliantly with a whole variety of other other options you can freeze what you want and don’t eat or you can just eat the leftovers of a snack can also make this several hours in advance and bake it just before serving

Cooking Instructions

Hey oven to 350° mash the feta in a large mixing bowl add the ricotta and the mash again to thoroughly mix stir in the egg spinach scallions chili Parmesan nutmeg and plenty of salt and pepper with half the breadcrumbs

Brush an 8 x 12” baking pan a little olive oil layer half the Filo sheets onto the pan brushing each with olive oil before adding the next scatter with the remaining breadcrumbs when I make the triangles I do the same thing I layer it by three drizzled each one with olive oil as I’m layering them the on the way do I put a nice tablespoon of mixture in there and pull it like a flag

Spoon in the ricotta filling and gently spread over the phyllo so as not to move around the breadcrumbs cover with the remaining feel brushing with the oil as you go and finishing with a good coding oil on top score in the small triangular portions bake for 35 to 40 minutes until golden and Chris like I said if you listen to me you can skip the laptop and just do it as you go

Hi Everyone!! I wanted to share with you this Spinach Pie recipe that my mom gave me many moons ago. I remember it was hard to find Greek products in our area, so once a month we had a day trip to Astoria. Wow!!! that was a long time ago, anyway we would go to this little Greek Deli Store to buy what she needed for the month. She always had a list ready, (and she still does today) with the usual products. Feta, Coffee, Olives, Oil, classic right! I know!! :0Till this day, whenever I go back to Greece to visit my mom, we go to Athens City Center into the old market area…have a cup of coffee, catch up on things, and then go shopping. In Athens the old Deli’s stores still exist with the cheeses, and spices in huge barrels, sausages, you can even find a huge variety of peanuts, I can go on and on but there are just too many products to write down.So, now for the recipe….:) Hope you enjoy making it!!! There are so many variations of cheese spreads in the greek cuisine, that are so easy to make in just a few minutes, so here is one delicious spread with a few ingredients. Great cheese spread for bread, crackers, fried Zucchini, Aubergine, or anything else you love adding cheese spread on. I know some people who actually put this on their pasta instead of sauces…:) A bit of information about the word Kopanisti the definition is: to beat something (Ko-pa-ni-so)…hahahaha…sometimes the definitions are funny. 🙂The original recipe comes from the Aegean Islands of Tinos, Syros, and Mykonos. The cheese they use on these islands is not Feta cheese, they use a cheese that they produce called Tyrovolia. The taste is not the same as Feta cheese, it’s similarity is more towards cottage cheese.Now, this recipe has been tweaked with Feta cheese, and with the delicious mix of yogurt, peppers, and Cayenne paprika, makes it spicy, salty with a mouthwatering taste you will enjoy. Hi guys, I hope you are all well….I am trying to get myself organised again, and as they say trying to get into the groove of things. hahahaha. I thought I would start off the morning by taking Charlie for a nice long walk with a good friend and her dog. I kept bumping into the poor woman because Charlie is young and he wants to play with her dog who wanted to play too but due to a bit of small I won’t say big knee problem I was worried he might throw her down on the ground. We had a great walk laughed and talked and so enjoy her company. The weather started out foggy but turned into a beautiful day with sun and actually warm. 🙂I had already decided what I was going to make today so the ingredients were waiting for me on the kitchen counter. 🙂 Unfortunately, I wasn’t able to make my own Tomato sauce like I usually do, because our local supermarket did not have the rest of the ingredients I needed, so I used a store bought Tomato sauce which is just as good. Pies or Pites are a tradition in Greece, if not every week at least every other week you would always have some sort of Pita, that being Spinach pie, or Cheese or Meat pie, 🙂 so today I made this fantastic Pasta pie with a variety of vegetables. The best part about this pie is that you can make this mixture the previous day and leave in the fridge overnight of course without adding the eggs.I hope you enjoy this recipe :) Foodzesty
