Milled /Crushed Cocoa pop Cake

I love apples. Not only they taste good raw, they also have so much potential in them: apple pies, applesauce, steamed apples (traditional Chinese dessert, good for sore throats), and finally apple cake! This simple recipe my favourite kind of apple cake. Basically you can just dump all the ingredients into a bowl, mix them up and pop it into the oven and you're good to go! Pair the cake with some ice cream and that is how you spellH-E-A-V-E-NPS. I used molasses sugar in the picture, that's why the cake is dark. Any sugar is fine, I have tried using gula melaka (coconut sugar) and honey. Just watch out for the consistency of the batter: I had to add a little more flour when using liquid sugar.

Through a lot of trial and error, I came up with my own recipe for cocoa sponge cake. The scent and flavor of the cocoa made this cake come out just the way I wanted it.The cocoa might clump, so make sure you sift very well. Chocolate mmmmhhh a favorite sweet that most just love. I haven’t made this Chocolate Sponge cake in a while, and I decided to make it last night. I had all the ingredients and it only took about 35 minutes. I went out to eat at a fancy schmancy restaurant and they served a butter cake. It was... probably the best thing they served. It was a little crispy, buttery. Can a cake be sexy? That’s what it was. I never heard of a butter cake, never tried one. I looked into it and this is my rendition.

#CA2025 I was making a birthday cake and needed a box of yellow cake mix. No yellow cake mix and it is pouring rain so I’m not going out. Yellow cake recipe to the rescue and it is a winner. I wanted a three layer cake and I am not so good with horizontal cutting so I divided the mix to three pans and cut bake time to 18 minutes.

Cake Pops are a really popular cut e way to serve cake. Most cake pop recipes use boxed cake mix, mixing the baked cake crumbled with ready made frosting to make a sticky ball. They are all beautiful but very sweet and I am not a fan of premade frosting. Nortic Ware puts out a cake pop pan and uses a scratch recipe which makes a amazing brownie cake like pop. They need no crumbling or adding of frosting they are delicious pure balls of moist cake. I covered them with good quality white chicolate then decorated them. They are not to sweet, you bite into a moist chocolate fudgy cake with a delicious pure white chocolate coating!

A few days ago a very dear friend of mine called me up to ask me if I was able to make a cake for a small gathering that she was hosting on Friday night. As we were chatting away I asked her if she had a preference, but I already knew that she was a chocolate lover. 🙂 So, two fantastic recipes popped into mind to choose from one was the Chocolate Almond Upside Down Cake or the Walnut – Chocolate Bundt Cake and the choice was obvious the latter. 🙂So, I took out my pots and pans and all my other little gadgets and got to work on it yesterday morning. As I was making the cake I thought to myself ufff have to try the batter to see if its any good, as I mentioned previously me and chocolate not such a good mix hahahahaha, but what can I do!! I have to taste what I make and bake right! and so I did and it was good. 🙂 Popped it into the oven, cleaned up the kitchen and off I went to make my next recipe, which I will be posting tomorrow or Monday not sure yet. 🙂You will see that there is a glaze on the cake…unfortunately, I have difficulties in NL finding some ingredients to make the recipes that I want too. I went to 3 different supermarkets and I could not find heavy cream, 😦 so my glaze is store bought. But I have added the ingredients for the glaze, because I am sure it exists elsewhere. 🙂Last night I took over the cake, and it was a success…I was very happy that everyone loved it!! 🙂 and I hope you do too…:)

Low carb desserts are really quite hard to track down sometimes. I have to tweak them to suit my taste (I like desserts) and this is one such recipe. I recently tried swapping out one tablespoon of the cocoa powder for one square of 90% cocoa chocolate (I used Lindt Sprugli brand) tucked into the middle of the batter before microwaving. Splendidly chocolatey!

I experimented several times and finally came up with this recipe.This sponge cake has cocoa powder inside, so it loses its airy texture very easily. So mix the batter as quick as possible after you add the cocoa powder. However, if you don't mix enough after you add the milk, the sponge will be too fluffy and crack when you roll it. Made this cake for New Year's eve.NOTE : the measure of ingredients such as baking powder and baking soda are in terms of tsp, and cocoa powder in terms of tbsp. Use 4-5 drops of vanilla extract.You can also use a cake stencil for the garnishing.P.S.: I didn't have whipped cream so I used heavy cream and whipped it with powdered sugar and vanilla extract.

I created this recipe because I wanted to make a delicious pound cake that can be a little gift to take to somebody's house.There are recipes that use vegetable oil, but the butter definitely makes the cake more delicious.Please mix the mixture well after adding the eggs so that it won't separate.The batter seems a bit thick, but once it's baked, it will flatten so it's ok.It's also tasty to add bananas, walnuts, or make a marble pound cake with cocoa powder or matcha powder.I think it's ok to use rum instead of brandy. I tweaked it just a bit (instead of espresso powder, I used instant coffee and I added it to the water to dissolve). You will never need another chocolate cake recipe after trying this one.
