Cooking Instructions
- 1
First, chop your dried fruits and soak them in cold water.
- 2
Beat three eggs with sugar, vanilla and salt slowly increasing the speed of the mixer.
Try to incorporate lots of air while beating the eggs.
Add oil when the mixture almost doubled in size and continue mixing it up.
- 3
Add milk, flour, chopped hazelnuts, dried fruits, baking soda, baking powder.
- 4
Mix it up in the slow setting, don’t beat it up or mix too much.
When you can’t see any flour bits in the mixture, stop mixing.
You can change to spatula here.
- 5
Put the batter into a desired ovenware. I used a round cake pan here.
Start baking the cake in cold oven set 150C/300F until it rises.
After 20 minutes, or after it rises, crank the heat up to 180C/350F.
- 6
Take the cake out of the oven by doing a toothpick test after 40 minutes.
The baking time may change depending on your ovens.
Cool the cake before slicing and serving.

This is the Indonesian version of Fruit & Nut cake (no nuts in my photo though). It's using a mix of sugar and dark and sticky palm sugar. You need to shave or shred the palm sugar to make it easier to beat. Daisy -

Light Fruit Cake Light Fruit Cake
This cake is especially relevant for those who do not like to eat dense fruit cake but want some simple and fast Christmassy bakes . Apart from their lighter color, light fruitcakes tend to be less rich and not quite as sweet as their dark counterparts.Recipe adapted from Joyofbaking.#cake#mycookbook Lavender -

Xmas Chocolate Fruit Cake Pt. 1 Xmas Chocolate Fruit Cake Pt. 1
#MyCookBook2020, I decided to revamp this recipe with a bit of extra oomph without going over the top with decor or extra icing. I still prefer my cakes to be simple. Because simplicity is always the ultimate sophistication, do you agree?I will be dividing this recipe into 2 parts: soaking of fruits and baking the cake. But it will be all in the same post. I will update the 2nd part after 10 days; that is how long I am gonna soak the fruits. You can do it in 7 days. You can of cos use any types of liqueur you desire, I decided to go for Cointreau for that extra fruity punch. To make life easier, I am using a dried fruits mix from Foodsterr. You can also use any other dried fruit combinations you are fond of too. Dried cranberries, blueberries, candied lemon peels or sultanas are great options. I will see you in 10 days. Daniel Lim
