Apple Cake

I love apples. Not only they taste good raw, they also have so much potential in them: apple pies, applesauce, steamed apples (traditional Chinese dessert, good for sore throats), and finally apple cake! This simple recipe my favourite kind of apple cake. Basically you can just dump all the ingredients into a bowl, mix them up and pop it into the oven and you're good to go! Pair the cake with some ice cream and that is how you spell

PS. I used molasses sugar in the picture, that's why the cake is dark. Any sugar is fine, I have tried using gula melaka (coconut sugar) and honey. Just watch out for the consistency of the batter: I had to add a little more flour when using liquid sugar.

Ingredients

  1. 3 cupsflour
  2. 1 1/2 cupssugar (or to taste)
  3. 1 cupmelted butter
  4. 3eggs
  5. 1 teaspooncinnamon
  6. 1 teaspoonbaking soda
  7. 1 dashvanilla extract
  8. Pinchsalt
  9. 3-4apples, peeled and cubed
  10. Other dried fruits or nuts (optional)

Cooking Instructions

    Preheat oven to 160℃.

    Combine flour, sugar and cinnamon, baking soda and salt in a bowl.

    Add in eggs and melted butter and vanilla extract. The batter should be something like cookie dough.

    Stir in the apples (and other dry fruits or nuts).

    Bake for 60 minutes in preheated oven.
