Rich Cocoa Almond Microwave Cake (LCHF)

Low carb desserts are really quite hard to track down sometimes. I have to tweak them to suit my taste (I like desserts) and this is one such recipe. I recently tried swapping out one tablespoon of the cocoa powder for one square of 90% cocoa chocolate (I used Lindt Sprugli brand) tucked into the middle of the batter before microwaving. Splendidly chocolatey!

Mix the dry ingredients in a microwave safe bowl

Add the wet ingredients and combine

Level the top with a spatula, cover with plastic wrap/ cling film and fold over one corner to leave a steam hole

Microwave for 1 minute on high

Let stand 1 minute

Serve with double/heavy cream, either poured straight over or whipped
