Yesterday all the bananas at Trader Joe’s were very ripe and they seemed to be telling me in unison: “Bake something delicious with us before it’s too late!”. Four of them got lucky and became this yummy banana/chocolate bread.

Banana Chocolate Chip Bread

Ingredients

  1. 4ripe bananas
  2. 85 gramsunsalted butter, melted and cooled
  3. 1/3 cupplain Greek yogurt
  4. 220 gramsbrown sugar (light or dark or a combination)
  5. 2eggs
  6. 2 teaspoonsvanilla extract
  7. 180 gramsall-purpose flour
  8. 75 gramswhole wheat flour
  9. 1 1/2 teaspoonbaking soda
  10. 1/2 teaspoonkosher salt
  11. 135 gramsmini chocolate chips or finely chopped chocolate (semisweet or bittersweet)
  12. 130 gramswalnuts, toasted and coarsely chopped
  13. Turbinado sugar (or any coarse sugar) for finishing

Cooking Instructions

    Heat oven to 350F. Lightly grease a 9x5 loaf pan. Line with parchment paper and grease and lightly flour it.

    In a large bowl mash the bananas.

    Add butter, yogurt, brown sugar, eggs and vanilla. Combine well.

    In a medium bowl mix both flours, baking soda a salt. Add to banana mix and combine using a spatula.

    Gently add the chocolate and walnuts, and mix until incorporated.

  6. 6

    Pour batter into loaf pan and spread into an even later. Sprinkle the surface with the coarse sugar.

    Bake for 75 minutes until edges of loaf start to pull away from the pan. Transfer to cooling rack and run a thin knife around the edge of the banana bread to separate it from the pan.

    After 15 minutes of cooling, unmold and cool completely.
