Ingredients

  1. 2 poundsYukon Gold potatoes
  2. 40 gramsbutter
  3. 1/4 teaspoonNutmeg
  4. 2 teaspoonscoarse salt
  5. Ground white pepper
  6. 1 cupmilk

Cooking Instructions

    Peel and cube potatoes. Steam them until tender (test with a knife).

    While hot, purée using a potato ricer.

    Add butter, nutmeg, salt and white pepper. Mix with spatula.

  4. 4

    Heat milk until it is hot and very slowly incorporate to the potatoes, mixing constantly with a spatula. Adjust seasoning.

    Cover in plastic wrap until serving. Keep warm in bain-marie or reheat in the microwave.
