Ingredients

  1. 1Beef Shin (Or Whatever You Have)
  2. 1 CanSan Marzano Whole Tomatoes
  3. 5Carrots
  4. 3 StalksCelery
  5. 3Red Potatoes
  6. 2Sweet Onions
  7. 4 ClovesGarlic
  8. 2 Tbs.Tomato Paste
  9. 3 TbsCurry Powder
  10. 1 TablespoonTurmeric
  11. 1 TablespoonCorriander
  12. 1/2 Tsp.Allspice
  13. Copious Black Pepper
  14. PinchSalt
  15. Ginger (Matchstick Sliced)
  16. 1/2 HandfulSun-dried Tomatoes
  17. PinchHot Chili flakes
  18. Kosher Salt
  19. Black Pepper

Cooking Instructions

    Sauté Onion and Garlic along with tomato paste and sun-dried tomatoes until onions take on color and tomato paste is caramelizing.

    Empty can of tomatoes into the blender and purée. Add to pot with onions. Add in all seasonings. Combine well and simmer on low.

    Season beef very simply with kosher salt and black pepper. Don’t be shy, encapsulate it well.

    Strategically cut veggies and make a bed in the bottom of your cooking vessel. I am using a clay pot. Spoon over the curry sauce. Place meat on top. * The veggies will release liquid and sink. Don’t be worried if the lid won’t close all the way. Place a sheet pan underneath when it goes in the oven.

    Bake at 275 F for three hours.

    Serve with rice
