Gochujang Chicken

I heard someone tried to cook my ‘Baked Hot Chicken Wings’ using Gochujang for the sauce. Gochujang is a Korean sweet & spicy chilli paste. Gochujang version of ‘Baked Hot Chicken Wings’ sounded very interesting and I tried to cook it. I liked the sauce I made, and the Chicken Wings were delicious, but I thought Chicken Fillets would be a lot nicer because I wanted to eat them with Rice. And, the easiest way to cook Chicken Fillets is a frying pan. If you don’t have a large frying pan, you can bake them in the oven.
Cooking Instructions
- 1
Combine all the Sauce ingredients in a small bowl. Alter the amount to suit your taste.
- 2
Lightly season Chicken Fillets with Salt & White Pepper. Coat them with Plain Flour (OR Potato Starch).
- 3
Frying Pan Method:
Heat Oil in a large frying pan over medium heat and cook Chicken Fillets until both sides are nicely browned and cooked though. Transfer to a plate and remove the excess oil in the pan using paper towel. - 4
Pour the Sauce in the pan and heat over medium low heat until it bubbles. Return the Chicken and coat with the thickening sauce. Sprinkle with some Toasted Sesame Seeds and serve.
- 5
Oven Baking Method:
Preheat the oven to 220℃. Line a baking tray with baking paper. Place the Chicken Fillets on the prepared tray and bake for 15 to 20 minutes or until nicely browned. - 6
Coat the baked Chicken with the sauce, sprinkle with some Toasted Sesame Seeds, then place them back on the tray. Replace the baking paper if required. And bake for 10 to 15 more minutes.

Korean Chicken Teriyaki Korean Chicken Teriyaki
I just love yangnyeom chicken, Korean fried chicken that has a sweet-salty flavor. But since they are deep fried and then coated with sauce, the calories add up. So I omitted the deep frying, adjusting my usual teriyaki chicken recipe, and made my own version of yangnyeom chicken! In Step 3, I use a non-stick frying pan so I don't add any oil to it. If the heat is too high the sauce will burn, so be careful. (If you don't have a non-stick frying pan, add a little sesame oil to the pan!) Recipe by Hanacchitomocchi cookpad.japan -

Homemade Gochujang for Bibimbap Homemade Gochujang for Bibimbap
Gochujang is originally a fermented miso using koji and chilli, similar to Japanese miso. If you try to make it from scratch, it will take a lot of time and labour. When she used to run a shop, my late grandmother asked a Korean BBQ restaurant owner to give her their recipe for gochujang. I changed it to suit my taste. This is my own recipe, so adjust the amount of the ingredients to taste. You can store this in the fridge for a long time. When you have time, make it in batches. By adding a little gochujang to stews, braised fish, and dressings, you can easily enjoy a Korean flavour in your dishes. Recipe by Heartful Kitchen Rei cookpad.japan -
Octopus and Shredded Vegetable Salad With Gochujang Octopus and Shredded Vegetable Salad With Gochujang
I used to add honey to gochujang sauce, but when I tried adding mirin, it was delicious! This is a gochujang sauce that brings out the good characteristics of vinegar without being too sharp. If you chill all the ingredients (before combining the vegetables and sauce) before serving, the dish will be more delicious. You can also use any vegetables you have at hand such as daikon radish and bok choy.If you like a kick of spice, you can add ra-yu spicy chili sesame oil to the sauce. Nanohana and Squid with Gochujang Nanohana and Squid with Gochujang
10 years ago I used to go to a Korean cooking class in Ogikubo, Tokyo. I took the nanohana recipe I learned there and added squid and a little gochujang sauce to come up with my own variation. You might think that gochujang sauce is complicated! But you just have to chop and grate and mix things in order.I buy fresh sashimi-grade squid in the evening when it goes on half-price sale at the supermarket, peel it and freeze it to use in cooked dishes too. For the gochujang sauce, you can use commercial ponzu sauce instead of the soy sauce, lemon juice, vinegar and sugar. Adjust the amount of sugar used depending on the gochujang you have. Sweet and Savory Chicken and Nagaimo Yam Stir Fry Sweet and Savory Chicken and Nagaimo Yam Stir Fry
This was a recipe using kimchi, but I revised it as a sweet and savory sauce so that children could eat it as well.Quickly frying the nagaimo makes them crispy.Slowly frying them makes them soft and chewy. Thoroughly cook the chicken all the way through. There's no need to add oil to the pan, just cover with a lid, and it will cook through easily. Recipe by sakurai cookpad.japan -
King Oyster Mushroom Gochujang Teriyaki King Oyster Mushroom Gochujang Teriyaki
I added gochujang and shiso leaves to that recipe to create this dish that will get your appetite going even in the summer.I used delicious, thick king oyster mushrooms from Nagano prefecture.Press down on the shiso leaf while wrapping the meat to secure in place. That's the trick. The meat will be a bit sticky, so it should stick on neatly. If you mix the gochujang teriyaki ingredients together beforehand you can whip this dish up quite quickly. Chicken Gochujang Teriyaki Chicken Gochujang Teriyaki
This is a recipe that I thought of when making my bento one day.*My homemade gochujang contains less chili peppers so isn't as spicy as some store-bought ones. If you're using a store-bought one then please either adjust the amount of gochujang or add more cooking sake. Or, you can use store-bought yakitori sauce. Recipe by Yuuyuu0221 cookpad.japan -
Salad with Gochujang Sauce and Mayonnaise Salad with Gochujang Sauce and Mayonnaise
I was thinking of the different kinds of dishes I could use my Korean sauce in when I came up with this recipe. I think that was 7 years ago. It's really great with mayonnaise. It might look slightly complicated with all the steps, but it actually only requires you to mix the ingredients to make this delicious sauce.Let the gochujang sauce sit for a while to improve its taste. When adding the ingredients in order in Step 1, mix everything pretty well before finally adding the sesame oil. This sauce is so versatile - please add it to your cooking repertoire. Korean Fried Chicken Korean Fried Chicken
I've eaten this so many times, it's possibly my favourite food. Here's my interpretation after eating and cooking several different versions. I prefer a basic raw sauce, but I tried a cooked one which is great as well and slightly more acidic due to ketchup. I included both recipes. RiceCake -
