Easy Minestrone made with Tomato Juice

I had tomato juice that I wanted to use up, so I tried making soup with it. This is really good for you since it has tons of vegetables in it. Cooking the vegetables slowly really releases their flavor.
Feel free to use any vegetables you like – go ahead and add anything lurking at the bottom of your veg compartment.
I didn't list any meat in the recipe, but this also tastes great with bacon or chicken added. Recipe by Maji

My younger sister made this for me and so I reinterpreted her recipe a bit. When using tomato juice containing salt, you don't need to add any for seasoning.Although it's troublesome, I recommend taking the extra effort to brown the surface of the chicken to tone down the odor of the meat. Veggie-packed Minestrone Veggie-packed Minestrone
All of my cooking centers around how to get my vegetable hating son to eat his vegetables. He especially hates raw tomatoes which is why I used canned tomatoes as the tomato base. He'll eat it if I use that.It also tastes good with wiener sausages in place of bacon. You should really boil the macaroni separately before adding, but that's so troublesome so I always boil it in the soup with the vegetables. You can make this with a wide variety of vegetables. My grandma made minestrone for me, and I felt like cooking it, too.I made it with tomatoes since they are in season now.You can add more ingredients. I recommend cabbage, beans, etc.If you don't have fresh tomatoes, use canned, but fresh are more delicious. When you stir-fry the bacon in Step 2, it's better to stop right before it becomes crispy. I heard that it's more authentic not to use bacon or other meat-based bullion cubes, so I made this soup without them. You can simmer it some more so that the veggies will become soft and fall apart. I like to serve it with a dash of parmesan cheese. Recipe by Setsubunhijiki cookpad.japan -
