cookpad.japan @cookpad_jp
This is a method to prepare fresh squid shiokara style.
By drying the squid overnight, the appropriate amount of liquid evaporates, and results in a rich shiokara taste.
I added red chili pepper for spice and kombu for umami flavor. Recipe by Cooking S Papa

The Best Ika no Shiokara (Salt Preserved Squid) The Best Ika no Shiokara (Salt Preserved Squid)
I make this every time I go fishing and catch some surume squid. The way you treat squid differs slightly depending on the type. For this recipe I've used surume squid. Some surume squid may be hard to skin. You can keep ika no shiokara for a few days, but try to eat it up in a week. If you want to keep it for a longer time, you can freeze it. If you are worried about parasites and so forth, freezing should take care of that. For 1 week's worth. Recipe by Tetsuamru cookpad.japan -

An Izakaya Standard Stir-fried Squid An Izakaya Standard Stir-fried Squid
A friend of my mother's taught me this recipe. Apparently it's a standard item at izakaya.Avoid overcooking the squid! If you do, it'll become hard and dry. Turn off the heat when you think it's cooked through! You can add ponzu sauce after turning off the heat.If there's a lot of liquid in the pan, remove the squid, simmer down the liquid, and pour over the squid. Izakaya-Style Squid Kara-age (Fried Squid) Izakaya-Style Squid Kara-age (Fried Squid)
When we had a company party at an izakaya we frequent, we ordered this dish. I tried recreating it at home. The shichimi makes it spicier and more delicious. For the marinating sauce, simmer to 1/3 of the original amount of liquid and cool. If you mix the veggies while the sauce is hot, the lettuce will wilt too much. Put the fried squid quickly into the sauce. Don't worry about draining the oil, it's better that way.
