Chicken Parmesan with Grapefruit Sauce

I've been making a dressing by just combining grapefruit juice and soy sauce. I added a little twist to it to turn it into a sauce. The sweet and sour sauce was a perfect match with the chicken and cheese.
Leave the lid open when you cook the chicken. If you cover it, the cheese will melt and leak. At Step 1, cut the thick part of the chicken with a knife and open it up, so the chicken will be cooked evenly. Other cheeses, such as Gorgonzola or feta cheese also are good for this recipe. Cooking Instructions
- 1
Squeeze out the grapefruit juice. Peel the skin off from the chicken to create a pouch.
- 2
In a bowl, add 2 tablespoons each of sake and grapefruit juice, and marinate the chicken in it for about 30 minutes. Then coat the chicken evenly with katakuriko and remove from the bowl.
- 3
Stuff the finely grated Parmesan cheese between the meat and the skin. Sprinkle some salt and pepper all over the chicken.
- 4
Place the chicken from Step 3 skin side down into a skillet, and cook it without moving the chicken over medium heat for 7 to 8 minutes, until golden brown.
- 5
Flip the chicken and cook the other side over medium-low heat for 3-4 minutes until thoroughly done.
- 6
Meanwhile, make the sauce. Combine all of the ■ ingredients in a pan and simmer until thickened. Once it is thickened, add 100 ml of the grapefruit juice and reduce some more. Add the remaining grapefruit juice, bring it to a boil again and the sauce is done.
- 7
For the garnish, peel a grapefruit (not listed) like you would peel an apple, and cut out each segment with a knife.
- 8
Cut the cooked chicken in half, serve it on a plate, drizzle on the sauce, and it is done.

This is our take on chicken parmesan. It's not a classic, traditional recipe but it is delicious! We enjoy a combination of alfredo and marinara sauce for our recipe. The overall process is a little time consuming and involved...it takes a lot of multi-tasking...but it is so darn good. We usually save it for a weekend night when we have more time in the evenings. You may also have some marinara leftover (we usually do), but it can be refrigerated for another recipe in the next few days or it can be frozen. Christina -

I had these huge chicken breasts to cook but I find the big ones tend to be tough even after brining sooo....I split the whole breast then butterflied them. Still HUGE so I cut them through and beat the crap out of them. Easy but a little time consuming. In the end, perfectly fork tender though. I literally had to dig for ingredients. Been out of town so I used what I had. Sometimes I wow myself 😂 SherryRandall: The Leftover Chronicles -
