Egg Bhurji is one of Mumbai’s popular street food. It’s one of the fast-selling dishes which one must definitely try when in Mumbai and at a thela (roadside cart).It’s an Indian version of scrambled eggs.

Cooking Instructions

(1). Egg Bhurji -
Add oil in a pan, sauté cumin seeds and green chilli. Add onion and cook till light brown and add tomatoes. - 2
Mix well add salt, red chilli powder, turmeric powder, cumin powder & onion Garlic red chilli powder & mix well.

Now add 4 eggs in the same pan and keep stirring till eggs are cooked properly. Close the pan with lid & cook on slow flame for 2-3 minutes. Lastly garnish it with chopped coriander leaves and mix well.

Add some water if bhurji is too dry and adjust the consistency. Lastly add amul butter to enhance the bhurji flavour.

(2) For Pav.
On a tawa add oil, add onion garlic red chilli powder and sauté it. Now roast the pav and garnish with chopped coriander leaves. - 6
Serve hot with onions and lemon.
