Ingredients

  1. 1whole Chicken - cut into bite size
  2. 🔪🔪 Finely Minced:
  3. 1brown onion
  4. 3garlic (optional)
  5. 4Big Red Chillies (or less)
  6. 🧂🥄Powdered Spices:
  7. 2 tspturmeric powder
  8. 2 tspcoriander powder
  9. 1/2 tspginger powder
  10. 🧂🥄Seasonings
  11. 1 tspchicken seasoning powder or chicken bouillon (to taste)
  12. 1 tbspsugar or to taste
  13. 1-2 piecestamarind peel/tamarind slice
  14. 🥗 To Garnish
  15. Chopped scallions/spring onions

Cooking Instructions

    Prep all ingredients:

    - clean and cut chicken

    - finely minced brown onion, garlic and big red chillies using food processor (see pic)

    - prepare powdered spices

    - prepare seasonings

    In a pull-chopper, finely mince big chillies, brown onion and garlic. See pic below.

    Heat 1/4 c of oil in a wok. Once oil is hot enough, add minced ingredients & powdered spices (turmeric, ginger & coriander). Cook until aromatic and the onion is well sauteed. Add the chicken.

    Add 1 big or 2 small tamarind peels. Cook & stir to mix over medium low heat. At this stage, chicken cooked on medium low produces more juice or liquid. Cover for 4-5 minutes. Next. Remove the lid. Add ingredients listed as seasonings (see INGREDIENT list). Turn the heat to the highest. Stir every now and then to avoid burn and continue to cook until the liquid is greatly reduced and thickened. Taste and adjust seasonings accordingly. Serve with rice or roti.
