Ingredients

  1. 11/2 cupsblack eyed beans
  2. 3Scotch bonnet peppers
  3. 2medium red bell peppers
  4. Salt to taste multi-purpose spice mix
  5. Yaji spice mix
  6. Garlic and onion powder
  7. Onions
  8. Scallions
  9. Water
  10. Vegetable oil

Cooking Instructions

    Put beans in a blender, add enough water and use the pulse button thrice. This helps to peel the beans quickly

  2. 2

    Rinse beans off the peels, add cut peppers and salt, then blend using the pulse button again.(Akara batter shouldn't be too smooth, naso my mama taught me 🥰🥰)

    Place oil for frying on heat source, add ginger, garlic, rosemary and onions to infused for some minutes. Pack out and our herbed and spiced infuse oil is ready for frying.

    Meanwhile, whisk your batter well, add chopped onions, spices, spring onions and mix well.

  5. 5

    Scoop batter into oil and fry, flip, press to release oil, fry until golden brown.

  6. 6

    Akara is ready to be paired with anything edible of choice.
