It's been long I made akara, so I decided to do this weekend end and we really enjoyed it because it's flavored intensed 😋😋
Cooking Instructions

Put beans in a blender, add enough water and use the pulse button thrice. This helps to peel the beans quickly

Rinse beans off the peels, add cut peppers and salt, then blend using the pulse button again.(Akara batter shouldn't be too smooth, naso my mama taught me 🥰🥰)

Place oil for frying on heat source, add ginger, garlic, rosemary and onions to infused for some minutes. Pack out and our herbed and spiced infuse oil is ready for frying.

Meanwhile, whisk your batter well, add chopped onions, spices, spring onions and mix well.

Scoop batter into oil and fry, flip, press to release oil, fry until golden brown.

Akara is ready to be paired with anything edible of choice.

I been having issues with gas build up of the food I have eaten. So I used this Asafetida powder and it didn't bother me with eating beans in my Chili. No gas attacks. I had pork filet that I bought on sale, so I made this. Usually I make 'filet cutlets,' but it's delicious simmered as I did this time. I'm thinking of using it in a curry flavored stew next time.Coat the filets with flour and pan fry until crispy and golden brown. Use the fat that comes out of the meat to cook it.
