A similar recipe was in a cookbook I have but as I was missing a few ingredients I adapted my own version and the result was very tasty. Quick and easy to make.

This is a twist on carrot salad. I needed something a bit different and began experimenting with other ingredients. When left to marinate the flavors marry perfectly! AmsCookbook -
Asian-Style Carrot Salad Asian-Style Carrot Salad
Not 17 anymore, but still dealing with those random pimples! So, I’m trying to get more veggies in, and this Asian-style carrot salad has become my go-to. It’s absolutely delicious! It feels so soothing to shave the carrots, and carrots are packed with vitamins for your skin and eyes. They help keep your digestion smooth and might even help balance hormones. For this recipe, I chop the middle part of the carrot to use for fried rice (waste not, want not!). Then, I mix up a quick dressing with soy sauce, vinegar, lime juice, garlic, sesame seeds, scallions, and a little chili oil if I want it spicy. Toss it all together, and you’ve got a salad that’s easy, tasty, and good for you! Plus, you can store it in the fridge for up to a week. Enjoy! Dandanyummyfood -

Thai-Style Carrot Salad Thai-Style Carrot Salad
This is a simple variation of a nam chim (Thai dipping sauce), which usually uses coconut sugar, fish sauce, manao (a Thai citrus fruit) juice and red chili peppers. I think the addition of honey and Tabasco makes the flavor more complex. The carrot tastes gentler when it's briefly stir-fried rather than left raw.Red onions don't need to be soaked in water since they don't taste that harsh; just mix them with the stir fried carrots at Step 4. Stir fry the carrots to your desired doneness. The sauce or dressing will be more fragrant if you use citrus fruits in season instead of lemon juice. For 2 servings. Hello!!! Did everyone have a good weekend? I hope so and I do hope that all is well…We had a very nice weekend it was the first one that we went out in a long long long time, we went and visited some friends who have moved to Germany from Greece. Our friend actually is a base player in a group and they were having a live concert on Saturday night so this gave us the opportunity to hear him live again!! I think its been 10 years since the last time I have been to a live concert. Germany had wonderful weather this weekend, Saturday night was just lovely, warm, stars were out, people dancing, and having a great time. 🙂Sunday we were invited over to some other friends house for lunch, the food was delicious BBQ, 🙂 we got a chance to catch up on everything and well we just had a lovely time. 😉 Just a small shout out thanking Katerina and hubby so much for inviting us to their home and their wonderful hospitality. (Before I forget Charlie had a great time too!!!) 🙂Since food was way to much this weekend, today’s lunch is light and salad is the only option. I ate Carrot Salad for the first time at my mother-in-laws :)…I remember that she placed it on the table and I made some sort of facial expression because she caught it hahahahahahah…and she remarked..:) Don’t get me wrong I love my mother-in-law, I have been very lucky she is like a second mom to me, anyway because I love salad I was absolutely going to try it, and have been making it myself since then. 🙂 Foodzesty
