Easy Rice Cooker Beef Stew (Japanese Style)

A low carb and hearty beef stew made in the rice cooker. I “dried” the beef on kitchen towels before marinading them as I wanted to eliminate the additional step of browning them on the pan. The stew turns out great, no overly gamey smell. Great for meal preps and busy nights! You can also add in potatoes, daikon or any greens.
Easy Rice Cooker Beef Stew (Japanese Style)

Cooking Instructions

Marinade beef overnight in a ziplock bag.

Mix all seasonings in a small bowl.

Chop onions into large chunks and lay at bottom of rice cooker. Add in Then add beef with 1/2 of seasoning mixture set to cook on brown rice mode for 90 mins.

After 45 mins, add eggplants carrots and shirataki noodles. Pour in remaining seasonings. And let cook till done!

As time went by, I gradually settled on this method which uses a generous amount of red wine.You don't need a lot of flavorings or soup stock granules and so on; the simple combination of beef and wine is delicious enough.Once you add the red wine, make sure to simmer rapidly to evaporate the alcohol. If you're using tomato juice, just simmer until it's blended with the beef and the liquid in the pan has reduced to about half.Once the demi-glace sauce is added, don't let it burn. I wanted to recreate a beef stew simmered in red wine of an old restaurant at home…My co-worker gave me a tip to add caramel into the stew.-If you want the potatoes to hold their shapes, don't add in Step 2. Add after the stew has cooled, bring back up to pressure and cook for 2 minutes. Then let it cool naturally.-Stop heating the caramel when it's still smooth in Step 3, then add the demi-glace sauce.
