Ingredients

  1. as required Washed and pre-soaked Thick Poha/ Flattened Rice
  2. 1Chopped onion
  3. 2Chopped green chillies
  4. 10Curry leaves
  5. 2 tbsp Chopped green coriander
  6. 1 tbsp +1 tsp Cooking oil
  7. 1 tspMustard seeds
  8. 1 tspCumin seeds
  9. 1/4 tspHing
  10. 1.5 tspRed chilli powder as per taste
  11. 1 tspTurmeric powder
  12. as per taste Salt
  13. 1 tspSugar
  14. 1 tablespoonLemon juice
  15. as requiredTo serve: Sev, Lemon wedges, Mango pickle, Fresh curd

Cooking Instructions

    First, wash and presoak the poha overnight if you are preparing it for breakfast. Also pre-boil the vegetables and store in refrigerator overnight for easy preparation. Also chop the onions, Chillies, coriander in the night and store in airtight glass containers for easy preparation.

    In the morning prepare the poha with quick recipe: Heat oil in a wok/ kadhai. While it heats, mix the vegetables, chilli powder, turmeric powder, salt and sugar to the poha.

    Then pop mustard and Cumin seeds in the oil. Then saute onion, Chilli, curry leaves, hing till translucent and aromatic.

    Then add 1/2 tsp turmeric powder to the tempering. Over it, add the poha with vegetables. Sprinkle some water mixed with some oil (1 tsp each) for shine and taste.

    Stir cook on medium to high heat for 4 minutes. Then cover and cook for 1 minute. Add lemon juice, mix well and turn off heat.

    Then serve immediately topped with chopped coriander leaves, Sev, lemon wedge. Serve pickle and curd to relish on the side. It tastes yummy!
