After eating too much chicken the other day, i decide to make a vegetarian dish which is quite similar to the one commonly eaten during Chinese New Year.

After eating too much chicken the other day, i decide to make a vegetarian dish which is quite similar to the one commonly eaten during Chinese New Year.
Cooking Instructions

Cut young corn to small size or slice.

Trim snow peas of both ends by hand. Pull out the fibrous "vein" on the straight edge, if any.

Remove the stalk, cut shitake mushroom to small size or slice.

Shred oyster mushroom by hand.

With the tofu skin still inside the packing, gently break it into pieces by hand.

Heat up cooking oil in the frying pan with medium heat. Stir fry both young corn and snow peas for about 2 minutes.

Add the oyster mushroom, cook for another 2 minutes.

When the oyster mushroom started to release its moisture, add shitake mushroom. Cook for another 2 minutes.

Add oyster sauce, light soya sauce, mirin, white pepper powder, black pepper powder and hot water. Mix evenly.

Add tofu skin, simmer for 5 minutes.

Ready to serve.
