Jollof macaroni with fried boneless fish

Cooking Instructions

Cut and wash your fish. Season with salt, fish seasoning, garlic, and ginger powder. Add a little water. Cook for about 7 minutes. Allow to cool. Remove bones from fish.

Heat vegetable oil on fire. Deep fry your deboned fish. Set aside.

Pour vegetable oil in pot and put on fire. Add ginger garlic paste and sliced onions. Allow to saute. Add your pepper paste and fry.

Meanwhile you have already parboiled your macaroni. Drain in a colander, rinse. Set aside.

When your pepper paste is fried, add enough stock or water to cook your macaroni. Season to taste with seasoning cube, salt, curry. Add your parboiled macaroni and stir thoroughly

Add your sliced carrots, green beans and onion. Cover, lower flame and allow to cook gently till all liquid is absorbed.

Dish out and top with your fried boneless fish.
