Parsnip & Apple Soup

I come across this idea while reading through a monthly magazine and loved the idea of it, so I did my own version of it.
Cooking Instructions
- 1
Grab a large stock pot or pan and place over medium heat, add the olive oil and onions and begin to cook down for 5-7mins, stirring occasionally so the onions don't burn.
- 2
Once the onions have colour, add the potatoes, parsnips and apples to the pan and stir through for 2-3 mins. Then add the stock, and bring to the boil, simmer for 35-40 mins until the parsnips are tender.
- 3
Grab a stick blender and here you can decide how thick or thin you want the soup to be, pulse/blend the soup to your desired consistency and remove, place back over a medium heat for 3-4 mins, add the cream and stir through.
- 4
Adjust the seasoning if needed, if you're happy with it then serve it up into big bowls with crusty bread to dunk into it. Garnish the top of the soup with fresh black pepper or a light grating fresh nutmeg. Enjoy

I like to serve this soup warm or cold in small glasses as amuse-bouche. I prefer it mild in order to taste the subtlety of the ingredients but if you and your guests are into bolder flavors, add cayenne or hot sauce. Ricardo -

I attempted to recreate a soup I had at Fleur de Sel, a restaurant in New York. (The soup at the restaurant had boiled chestnuts added to it.)I think it would be hard to find parsnips in Japan, but if you can get them, please try making this soup. By the way, parsnips are part of the parsley family. Recipe by K-ana cookpad.japan -

This is an experimental recipe I did, the kind where you have no idea if it'll taste nice or not but it actually came out tasting pretty nice. You can omit the lot of the optional ingredients and it'll still taste pretty nice. Rae -
Tuscan Chicken Soup Tuscan Chicken Soup
I'm a great fan of chicken soup as a natural cure for all ills, and I liked the idea of giving it an Italian twist. The original recipe uses cooked shredded chicken, but I didn't have any so I decided to buy a whole chicken, use some meat from that, use the carcass to make my own stock, and freeze whatever I didn't use for the soup. I asked the butcher to debone the chicken for me. Also, I used the last bit of my garden basil but you can use dried (as the original recipe does). Becky -

Apple Soup Apple Soup
Ahhhh, apples! Nature’s way of saying “I love you”This concoction is both buttery and crisp, and as versatile as a soup can be: you can serve it either savory (adding nutmeg) or sweet (adding cinnamon), depending on your whim and your family’s preference! Felix Cortes
