Warm Red Cabbage Slaw

Ingredients

30 minutes
4-6 servings
  1. 1small head red cabbage (1.5 lbs) core removed and sliced thinly
  2. 1sweet onion sliced thinly
  3. 4-6 stripsBacon
  4. 1/2 cupApple cider vinegar
  5. 1/2 tspblack pepper
  6. 2 TbspSugar

Cooking Instructions

30 minutes
  1. 1

    In a large skillet cook the bacon. You want it crispy. Transfer cooked bacon to a plate with paper towel to drain. Crumble bacon.

    Add onion to skillet and cook to just barely softened. Add vinegar, sugar and black pepper. Mix well and add in the cabbage. Cook to just wilt, you want the cabbage to be a little firm. You might want to put a lid on the skillet to help wilt the cabbage. Mix in crumbled bacon.

    Serve warm and enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
