Chewy Steamed Bread with Mochiko & Pancake Mix

I really wanted to eat a chewy steamed bread so I tried it at first with shiratamako. That didn't go too well, since shiratamako is supposed to be used for dango dumpling-like recipes, so I tried with mochiko instead and it worked!
Pancake mix is quite sweet but mochiko isn't, so it's better to use more sugar here than in a 100% pancake mix recipe.
This bread has a very light flavour so it's most delicious when served with a sweet spread like jam. For 6-10 servings. Recipe by Pukuttopukumaru

Cooking Instructions
- 1
Mix together the egg, vegetable oil, milk and sugar well.
- 2
Add the pancake mix and mochiko to the bowl and fold in with a spatula.
- 3
[Steaming in a Steamer] Line the inside of a steamer container with glassine paper cups. Pour the batter into cups.
- 4
Once there is steam coming out of the steamer, add the cups and steam for 15-20 minutes (this takes a bit longer than the frying pan way).
- 5
[Steaming in a frying pan] Pour the batter into the cups and line them up inside a large, flat frying pan.
- 6
Add 1 cm boiling water, cover the pan with a lid and steam for 12-14 minutes.
- 7
Once the bread has risen, they're done.
- 8
(Variation) I've made lots of variations of the original "Steamed Bread with Pancake Mix"with bananas, cocoa powder, raisins etc.
- 9
For each recipe, replace the 200 g pancake mix with 100 g pancake mix + 70 g mochiko.
- 10
Note: Shiratamako is extremely fine, but clumps easily, so it's not ideal for steamed bread.
- 11
Note: Using mochiko doesn't rise well, so add baking powder. The top photo omits the baking powder.
- 12
This a chewy steamed bread that I made with pancake mix and cake flour.

I really wanted to eat some chewy steamed bread but when I tried to make it with shiratamako, it just wouldn't mix.I should use it for dango instead, so I tried with bread flour and it went quite well.・Pancake mix is a little sweet, whereas rice flour is not, so it needs a bit more sugar than the recipes that use 100% pancake mix.・These have a really light taste so they go well with jam or something similar. Yuzu Tea Steamed Bread with Pancake Mix Yuzu Tea Steamed Bread with Pancake Mix
This yuzu teawas so delicious, so I wanted to use it to make steamed bread. To prevent the hot water splashing onto the bread, be extra careful with the amount of water you use. Also take care when you're removing it from the pan. You can prevent the hot water from dripping if you double the liners (or place muffin cups inside), in which case you'd only need to lift out the interior cups.
