Eggs are a staple ingredient often found in the fridge and are one of the most common cooking materials in daily life. From breakfast omelets to lunch fried eggs and dinner braised eggs, we encounter eggs in our meals frequently. We are also part of the group that loves egg dishes.This time, we paired healthy black fungus jelly with eggs, complemented by potatoes and Thousand Island dressing, to create the unique dish "Black Jelly Egg Salad." Honestly, it's quite tasty, especially when chilled. It's a great light meal option, rich in nutrients and refreshing to eat.TipsThe healthy black fungus jelly is made by slowly cooking black fungus in a nourishing broth, adding seaweed extract (gelatin, jelly powder), and then heating and cooling it to form a jelly. This results in a low-calorie, healthy dessert with a smooth, chewy texture. It comes in four flavors: original slightly sweet, original unsweetened, ginger slightly sweet, and ginger unsweetened. Besides enjoying the original flavor of the black fungus jelly, you can also enhance it with fresh milk, honey, or condensed milk according to your taste!

This salad is a take on the lettece wedge salad. It has more flavor with roasted Cabbage standing in for the lettece. It is absolutely delicious served hot with the contrast of cool tomatos, cool dressing and feta warming to a softness with the final crunch of bacon. However I have served it warm and even chilled and it is still delicious!

This is a very good salad. Easy to make. I use apple cider vinegar and a cabbage premix bag to save on time. You can also half the oil in the dressing if you want a more tangy flavor.
