I’ve been trying to use up this massive smoked pork shoulder in the fridge. There’s no way I can just eat sandwiches with all of it… or maybe I could. But I opted for a soup this time.

A delicious veggie stock with ginger & toasted seasame seed oil, slow braised melt in your mouth pork belly, tasty greens & traditional Chinese noodles, makes for a dish straight from the Orient.

Originally included 8oz sliced mushrooms but I replaced them with the jalapeños since I'm allergic and love a kick in taste.

One of the best soups I've had in a while.This recipe is for InstaPot >>>> but you could cook it on the stove in a regular pot; cooking time is about 45 minutes using medium high heat <<<
