Bone broth

Making a protein based broth that is also full of flavor is easier than you think. I save the carcass from roasted chicken or even a store rotisserie chicken. I use up vegetables that are in my fridge at the time too. I may just keep the broth or make a soup using any chicken that comes off the bone.
Cooking Instructions

In a large stock pot place in chicken carcass. Cover with water.

Add vegetables. Cook on medium heat until liquid comes to a full boil. The lower heat to simmer.

Cover the pot and simmer for at least 3 hours. Check on broth periodically.

Strain out the broth. Pick the usable meat from the bones. Taste broth and adjust salt and pepper if more is needed. Add the meat back to broth if you are going to continue on to make soup.

Now you can use the broth however you wish or use broth to start a soup.
