See "Melissa's whole crockpot chicken" recipe. Reserve bones, skin and juices from the cooked chicken. Put all into crockpot. Add water and veggies and spices. Taste and adjust seasoning to your liking.

Cook on low heat overnight, or about 10-12 hours. Strain liquid into a large bowl. Refrigerate. When cool, remove hardened layer of fat from the top of the stock. Portion into jars for easy storage.

Use in you favorite soup recipe, or freeze for later use.
