My mom's favorite Christmas cookie. I revamped my Grammie's recipe by adding walnuts

Ingredients

12 servings
  1. Cookie:
  2. 1 cupsugar
  3. 1/2 cupsoftened butter
  4. 2 tspbaking powder
  5. 1 tspbaking soda
  6. 1/2 tspsalt
  7. 3/4 cupmilk (I used cashew)
  8. 1egg
  9. 3 1/2 cupsap flour
  10. Filling:
  11. 2 cupchopped raisins
  12. 2/3 cupchopped walnuts
  13. 1/2 cupbrown sugar
  14. 1/2 cupwater
  15. 2 Tbsap flour
  16. 1/2 tspcinnamon
  17. 1/2 tspnutmeg
  18. 1/4 tspallspice

Cooking Instructions

    With electric mixer, cream sugar and butter until fluffy

    Add powder, soda and salt. Mix

  3. 3

    Add beaten egg, milk, and vanilla. Mix

  4. 4

    Add flour 1/2 cup at a time, mixing and scraping down the bowl between additions

  5. 5

    Wrap in plastic wrap, put back in bowl and refrigerate

  6. 6

    Preheat oven 350°

  7. 7

    In medium sauce pan add all filling ingredients.

    Cook over medium-low heat until thickened and liquid is nearly gone

  9. 9

    Set filling aside

  10. 10

    On clean, dry, well floured surface, roll out cookie dough and cut out cookies.

    Roll out and cut until all dough is used (about 24 cookies)

    Place half the cookies on parchment lined baking sheets.

    Place approximately 1 Tbs of filling in center of each cookie

  14. 14

    Cover each with the other cut out cookies and seal edges. Vent the tops with a fork

    Bake 12 minutes, rotating once

  16. 16

    Cool completely on wire racks. Store in air tight container

  17. 17

    You can use dried cranberries, figs or dried plums and any nut combo

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
