Ingredients

Serves 2 servings
  1. 2pork cutlets (leftover, store-bought, or frozen)
  2. 2 handfulsshredded mozzarella cheese
  3. 1/2tomato
  4. 1/2onion
  5. 1/2 tablespoonolive oil
  6. 2 tablespoonsketchup
  7. 1 pinchblack pepper
  8. Dried parsley to taste

Cooking Instructions

    Cut the leftover pork cutlets (or store-bought) into bite-sized pieces and place them on crumpled aluminum foil. Top each cutlet with a handful of cheese.

    Place in a toaster oven to warm up. (Use the fry mode if available.)

    Finely chop the tomato and mince the onion. Sauté the onion in olive oil until soft, then add the tomato and continue to sauté.

    Once the tomato breaks down and releases its juices, add the ketchup, mix well, sprinkle with black pepper, and turn off the heat.

    Once the pork cutlets are warmed, plate them, pour the tomato sauce over, and sprinkle with parsley.
