Ingredients

  1. 3 1/2 ozalmonds (unsalted)
  2. 2 tablespoonssugar (light brown sugar)
  3. 1 tablespoonwater
  4. 1 teaspoonbutter
  5. Rum, to taste

Cooking Instructions

    Light brown sugar

    Almonds

    Heat the sugar and water in a pan to make a syrup, and continue heating until the syrup forms large bubbles.

    Add the almonds and stir over medium heat. Turn off the heat and continue stirring.

    The sugar will crystallize and coat the almonds. Reheat and continue stirring without fear.

    Stir over low heat until the crystals melt and turn caramel-colored. When a faint white smoke appears, turn off the heat.

    Add butter and a splash of rum for flavor, and mix lightly.
