Sorrel is hard to find here in Florida. So we grow it. This is one way of preserving the sorrel. You can pickle, use the olive oil method, dehydrate, or freeze without the salt. This is good in soups, salads, sandwiches, casseroles, and even deserts.

Ingredients

  1. 4 ouncessorrel
  2. 1-1/2 teaspoonkosher salt

Cooking Instructions

    Pick the sorrel. Look it over, wash it, and dry.

  2. 2

    Salt it and put into a Ziploc bag. Crush the salt into the sorrel.

  3. 3

    Allow the liquid in the leaves to be pulled out. This will take a few hours. Push and squeeze all the air out of bag. Put into the freezer. Use as needed. I hope you enjoy!!!
