These are "better for you" cookies and taste great thanks to the coconut oil! I also use coconut palm sugar instead of brown to stay further away from refined sugars. I hope you enjoy them! :flower

Ingredients

  1. 1/2 cupcoconut oil *unrefined
  2. 3/4 cupbrown sugar
  3. 1egg
  4. 1/2 tspvanilla extract
  5. 3/4 cupflour
  6. 1/2 tspcinnamon
  7. 1/4 tspbaking powder
  8. 1/4 tspbaking soda
  9. 1/4 tspsalt
  10. 1 cupold fashioned rolled oats
  11. 1/2 cupdried cranberries
  12. 1/2 cupsemi-sweet chocolate chips

Cooking Instructions

    Preheat oven to 350°

    Using a mixer, cream oil and sugars

  3. 3

    Beat in egg and vanilla

  4. 4

    In a separate bowl, mix dry ingredients together

  5. 5

    Gradually beat dry ingredients into creamed mixture

  6. 6

    Stir in oats, cranberries and chocolate chips

  7. 7

    Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets

  8. 8

    Bake 9-12 minutes or until edges are golden brown

    Cool on baking pans for 1 minutes

  10. 10

    Remove to wire rack to cool
